Brinjal - 2 pieces
Curd - 4 teaspoons
Salt - a spoon
Turmeric - 1 teaspoon
Whole red chili - two pieces
Asafoetida - a pinch
Bay leaves - four leaves
Black salt - half a teaspoon
Garam Masala - 1 teaspoon
Coriander Powder - One Teaspoon
Red chilli powder - half a teaspoon
Oil as required
Coriander leaves
How to make Curd Brinjal Recipe Method:
First wash the brinjals. Cut it into a long size. After
that, heat oil in a pan, add cumin asafoetida, bay leaves and red chillies and
let it cook.
When this spice is cooked well, then add brinjal to it.
When the brinjals are cooked well, add salt and turmeric to
it and cook for a while.
After this, add coriander powder, red chilli powder and
black salt and cook it well on low heat.
After this, take curd in a vessel and mix garam masala green
coriander leaves in it.
When the eggplant is cooked well, mix it in the mixed curd.
And top it with a spoon of mustard oil.

Serve it with roti or paratha, garnished with green
coriander.
